Crispy Avocado Wonton Bites with Tamarind and Cashew Dipping Sauce


I was offered to conduct a cooking class for young girls at a nonprofit organization. Since Ramadan (month of fasting in Muslim calendar) was approaching, I thought it would be a great idea to try something different than the typical fried stuff (such as Pakora and Samosa) that is usually served to break the fast. Not that I mind a plate of Pakora or Samosa with steaming hot chai on any given day, specially when its raining :)​


I've always been fond of Cheesecake Factory’s avocados rolls. Me and my husband like it so much, I wanted to re-create them. So I started experimenting. I found that bite size version gives me more crispiness that I really like with creamy avocados. I used wonton wrappers in this particular recipe.


The tanginess of the tamarind adds a nice balance to the mild taste of avocados. Chunks of ripe avocado are covered with wonton wrappers, then fried in hot oil until crisp for a tasty dipping snack... yummy!!I



Crispy Avocado Wonton Bites with Tamarind and Cashew Dipping Sauce

Yield: 3 servings

Prep time: 20 min

Total cooking time: 30 min

Method: Fried

Ingredients

2 large avocados, diced

1/4 cup red onion, diced

1/2 jalapeno, finely diced

1 tbsp cilantro, chopped

1 tbsp lime juice (1/2 lime)

12 wonton wrappers

1 egg white or water

Directions

Mix the avocado, red onion, jalapeno, cilantro, lime juice and salt. Divide the mixture between the wonton wrappers, roll by folding up the bottom and top corner. Fold the right and left sides of the wrapper and seal all sides by joining them in the middle.


Make sure all edges are sealed shut (you can dab your finger in a little water or egg white and run it along the edges of the egg roll wrapper, moistening about 1/4 inch of the edge all the way around). This helps to seal the edges together when you wrap it up.


Heat 2-3 inches of oil in a small pan over medium-high heat. Add the wonton bites and fry until golden brown and crispy, about 3-5 minutes and set aside on paper towels to drain.


Cashew and Tamarind Dipping Sauce

Ingredients

1/4 cup oil

1/4 cup cashews, chopped or ground

1 teaspoon tamarind concentrate or 2 tablespoons lime juice

2 tablespoons honey

1/4 cup cilantro, chopped

Chili sauce sauce

Salt to taste

Directions

Mix the all ingredients in a bowl. Refrigerate before serving.
